Looking for a delicious and easy-to-make side dish? Try these herb roasted baby potatoes! With just a few simple ingredients and 30 minutes of cooking time, you can create a crowd-pleasing dish that's perfect for any occasion.

We love roasting potatoes because the oil helps the potatoes crisp up in the oven. Mixed with dried herbs, it also adds a fragrant and savory taste to plain old potatoes. 

Most of my recipes call for fresh herbs; however, since most people have these common dried herbs in our pantry I decided to blend them together.

These gluten and dairy free baby potatoes were delicious, crisp on the outside and soft on the inside.

Ingredients Needed

For this recipe you'll need the following ingredients: 

Baby Potatoes: These potatoes are also called 'new' potatoes. They're small in size and the skins are thinner and not as tough as some other potatoes. You can leave them whole if they're smaller in size or cut them in half. 

Extra Virgin Olive Oil

Kosher Salt

Dried Parsley

Dried Oregano

Garlic Powder

Ground Thyme

Ground Paprika

How do you make Herb Roasted Baby Potatoes?

Preheat the oven to 425 degrees F. Rinse the potatoes under cold water, gently wash the skins; then pat dry and add them to a mixing bowl. 

In a small bowl combine the olive oil and all of the herbs; then mix well. Pour the mixture over the potatoes, toss to coat; then arrange the potatoes in a single layer on a baking sheet. 

Bake the potatoes for 20-25 minutes or until they are golden brown and crispy on the outside and tender on the inside.

Serving Suggestions

These Herb Roasted Baby Potatoes would go perfectly with so many main entrees. Here are a few suggestions: 

Chicken: Balsamic Apricot Glazed Chicken Thighs, Caprese Stuffed Chicken Roll Ups, Chicken Francaise or Whole Roasted Chicken Oreganata

Pork: Honey Balsamic Pork Loin, Cream Cheese and Chive Stuffed Pork Chops, Italian Breaded Pork Chops or Pork Chops Pizzaiola

Beef: Horseradish, Garlic and Rosemary Roast Beef, Tuscan-Style Grilled Rib Eye Steak, Beef Ricotta Casserole or Cheesy Meatloaf

  • ¼ teaspoon ground paprika
