I like rice or risotto as a side dish, but baby potatoes; whether they are whole or smashed, are my personal favorite. Roasting potatoes are super easy too and a few ingredients go a long way to a tasty recipe.
These Parmesan Roasted Baby Potatoes were delicious with a crispy outside and a soft inside. They take about 40 minutes to make and serve 4 people.

Baby potatoes; which are also called new potatoes, are potatoes that are dug from the ground before they have fully matured.

For this recipe you'll need the following ingredients:
- Baby Red Bliss Potatoes: I used the red bliss potatoes, but you can use fingerling potatoes, Yukon golds or baby sweet potatoes. Try to find potatoes that are uniform in size so they cook evenly.
- Grated Parmesan Cheese: Parmesan or Pecorino Romano cheese works best in this recipe.
- Extra Virgin Olive Oil
- Garlic Powder
- Kosher Salt
- Black Pepper
How do you make Parmesan Roasted Baby Potatoes?
Start by preheating the oven to 375 degrees F; then wash the potato skins with a vegetable brush under cold water and pat dry.
Add the potatoes to a mixing bowl along with the cheese, oil, garlic powder, salt and pepper. Mix well; then add the potatoes to a sheet pan.
Cook 35-40 minutes until the potatoes are lightly browned on the outside and soft on the inside when you insert the tip of a sharp knife into one of the largest potatoes if they're not uniform in size.
