If I had to choose between potatoes and rice, it's potatoes all the way. Especially these Parmesan Roasted Baby Potatoes! 

I like rice or risotto as a side dish, but baby potatoes; whether they are whole or smashed, are my personal favorite. Roasting potatoes are super easy too and a few ingredients go a long way to a tasty recipe. 

These Parmesan Roasted Baby Potatoes were delicious with a crispy outside and a soft inside. They take about 40 minutes to make and serve 4 people.

What are Baby Potatoes?

Baby potatoes; which are also called new potatoes, are potatoes that are dug from the ground before they have fully matured.

Ingredients Needed

For this recipe you'll need the following ingredients: 

  • Baby Red Bliss Potatoes: I used the red bliss potatoes, but you can use fingerling potatoes, Yukon golds or baby sweet potatoes. Try to find potatoes that are uniform in size so they cook evenly.
  • Grated Parmesan Cheese: Parmesan or Pecorino Romano cheese works best in this recipe. 
  • Extra Virgin Olive Oil
  • Garlic Powder
  • Kosher Salt
  • Black Pepper

How do you make Parmesan Roasted Baby Potatoes?

Start by preheating the oven to 375 degrees F; then wash the potato skins with a vegetable brush under cold water and pat dry.

Add the potatoes to a mixing bowl along with the cheese, oil, garlic powder, salt and pepper. Mix well; then add the potatoes to a sheet pan.

Cook 35-40 minutes until the potatoes are lightly browned on the outside and soft on the inside when you insert the tip of a sharp knife into one of the largest potatoes if they're not uniform in size.

Serving Suggestions

Because of the simple flavor of these Parmesan potatoes, there are so many meals it will pair nicely with. Here are a few suggestions: 

Beef: Grilled Rib Eye Steak, Tuscan-Style Beef Brisket, Balsamic Meatloaf, or Parmesan Encrusted Roast Beef

Poultry: Rosemary Lemon Spatchcock Chicken, Garlic and Herb Stuffed Chicken, Turkey Kiev, Champagne Chicken or Caprese Chicken Meatloaf

Pork: Parmesan Rosemary Pork Cutlets, Honey Balsamic Pork Loin, or Pork Chops Pizzaiola
